2.212脆皮做法:本人建议先做脆皮再做泡芙.这样对于新手不会手忙脚乱的.毕竟脆皮做好也要放冰箱冷藏的~

3.1泡芙做法:低筋加高筋面粉混合过筛.

4.2橡皮刮刀拌匀然后.搓揉成棒状.保鲜膜包起来冰箱冷藏30分钟(如果不做脆皮的就忽略此处)

5.12锅内倒入水.切成小块的黄油.细砂糖.盐.开火加热至所有材料融化沸腾(大概有个 95度)

6.21从火上移开.将过筛的粉类一次全部加入.用橡皮刮刀快速拌成面团.炒菜一样拌哦不能打圈搅拌的!!

7.再次开中火边加热边不断搅拌.防止烧焦.直到面团生粘性(在锅底结出一层薄膜).关火.倒入盆里

8.趁热加入少量打散的蛋液用刮刀搅拌混合.此时留意面团软硬度.蛋液少量多次加入(用不完蛋液液没事)直到变成面糊.挂在刮刀上呈倒三角形

9.入裱花袋.挤烤盘上.表面涂剩余蛋液.(不涂也行.)

10.做好基础泡芙后脆皮也能用了拿出之前的脆皮.切片放在泡芙糊上烤箱预热200度.上下.30分钟(时间长短根据自家烤箱定)

11.叮~烤好后取出冷却.

12.下面是泡芙卡仕达内馅的做法(码字累死了)

14.把蛋黄打散.加入剩下一半的白糖继续打散.然后筛入低粉搅拌均匀.

15.锅里牛奶沸腾了.关火把牛奶缓慢分次的倒入搅拌好的低粉蛋黄里.一边倒一边搅拌哦.

16.全部混合均匀.过筛入锅加热.

17.要一直搅拌哦防止糊锅直到沸腾.加入无盐黄油融化继续搅拌至浓稠停火加入香草精拌匀.倒入容器冷却

18.冷却的卡仕达酱打蛋器打软用勺子或者入裱花袋
